Chicken Rendang

Visitor Recipe
Ingredients:
1-1 whole chicken
2-dried chillies 10 pieces{can be less}
3-galangal* 1 inch
4-ginger 1 inch
5-garlic 5 pieces
6-small onions 10 pieces
7-tumeric leaves.kafir lime leaves, {optional}
8-lemon grass 2 shoots
9-coconut milk 2cups
10-alt &sugar to taste
11-lime juice 2 table spoons
Method:
1-cut chicken into 8 parts
2-Ingredients no:2,3,4,5&6 grind or blend till smooth
3-mixed chicken,grind ingredients, coconut milk ,lemon grass and ingredients no 7
4-add sugar & salt
5-add lime juice when is about to dish out
Mix all above ingredients in Crock Pot for 2 hours until gravy thicken.

I can smell the aroma of this already!
It would have to be in the crock pot on high - but is 2 hours long enough?
I would have thought that this would need 4 hours on high or 8 hours on low.
*Galangal - is the edible root of an asian plant. Raw it has a citrusy, earthy aroma, with hints of pine and soap in the flavor. It is available as a whole root, cut or powdered - you should be able to get it from an Asian grocer.
