Crock Pot Apricot Chicken Recipe

Another new recipe that I cooked this last week. This one is not a strong apricot flavor but the whole dried apricots give it a lift and add that taste.

Neil really enjoyed it and ate it again the next day for lunch.

Don't be put off by the need for saffron - yes I know it's expensive but once in a while it's something special. And do be sure to buy the real stuff. How can you tell? ususally the price!


Slow Cooker Apricot Chicken


2 pounds (1kg) chicken pieces, skinless
½ tsp ground cinnamon
¼ tsp ground cardamom seeds (about 24 seeds ground)
1 medium onion, finely diced
1 clove garlic, minced
2 inch of ginger peeled and grated or 2tsp minced ginger
14½ ounce (400g) crushed tomatoes
1 cup chicken stock
Last Hour of Cooking
pinch saffron threads soaked in 2 tblsp water
1 pound (500g) dried apricots (I used the whole 'turkish' type).


1. Place the chicken in the Crock Pot.

2. Mix all other ingredients in bowl or jug.

3. Pour over chicken.

4. In a seperate bowl put the saffron threads and water to soak.

5. Cook on low for 7-9 hours.

6. An hour before serving stir in the apricots and saffron and water.
