Crock Pot Chicken Recipe

This recipe was kindly sent in by one of our visitors.

"I have a new 'recipe' that I concocted today after seeing the 'southwestern slow cooker chicken recipe' in your visitor's section
- I altered it to use what I had in the cupboard, since I didn't feel like making a trip to the grocery store...not sure what exactly you'd call it, but it was very tasty!"

Lisa's Southwestern Chicken Crock Pot Recipe
*2 chicken breasts, cut in apx 3/4" x 2" strips
*28 oz can Bush's baked beans
*2 - 11 oz cans (vac packed) whole kernel corn, drained
*7 oz can diced green chiles

Stir together all canned ingredients, top with the chicken strips and push down into the juice to coat/partially cover. Cook on Low 4-6 hrs.

Notes
I think using whole chicken breasts would be fine, I was just using up some chicken I'd cut up the night before and didn't use...

I used Onion flavor baked beans, but again that's what I had on hand, think it would have been good with anything...

ditto on the corn, used the vac packed because it was there...

the chiles did add a nice touch, not hot at all. This turned out *very* juicy, because of all the liquid in the beans - but personally, I thought it was great as is, we just ate it in bowls with spoons! Would be great with garlic bread to sop up the extra juice...
