Neil and I love to try soup recipes. We can't wait to try this yummy and healthy sounding one. This one will be a great addition to our collection and yours.
Crock Pot Chicken and Rice Soup Recipe
1 32 oz container organic chicken broth
2 C finely diced chives
2 C boneless skinless chicken breasts cut into 1/2” cubes
1/2 C diced garlic cloves
2 C diced red, yellow and orange bell peppers
1 C sliced white button mushrooms
1 Tbs oregano
1 box whole grain instant brown rice
Pour chicken broth inside crock pot turned on high heat.
Add cubes of chicken, chives, garlic, peppers, mushrooms and oregano.
Cook for 4 to 6 hours.
Add 3/4 C rice, let cook ten more minutes.
Serve with salad and bread sticks.
