Crock Pot Citrus-Ginger Ham Recipe

Crock Pot Citrus-Ginger Ham Recipe
3-4 lb. boneless ham
one lemon, sliced thinly
one orange, sliced thinly
1/2 c. light brown sugar
two slices candied ginger
1 12-ounce can lemon-lime soda
Place ham in crock pot.
Layer citrus slices alternately over the top of the ham.
Sprinkle brown sugar over the citrus slices.
Sprinkle a little of the lemon-lime soda over the top of the brown sugar, and then pour the rest of the can around the sides of the ham.
Place two slices of candied ginger in the lemon-lime soda on each side of the ham.
Put lid on crock pot, and turn crock pot to high and cook one hour, and then switch it to low and cook two to three more hours.
Remove ham from crock pot and let sit 10 minutes before slicing.
I created this recipe in autumn 1983 when I found out my brother and family were in town and I wished to have them over for Sunday dinner.
I used what I had on hand, put it together before we went to church, and when we arrived home the house smelled glorious.
My brother and his wife raved about the flavor and texture of the ham and said someday I should enter the recipe in a contest.
By the way, the leftovers make great Monte Cristo sandwiches or split pea and ham soup.
