Crock Pot Honey BBQ Beans

by Celeste Beatie
(Snohomish WA)

Ingredients:
1 can Black beans
1 can Pinto beans
1 can Great northern beans
1 can Maple sugar beans
2 Thick slices of red onion
1/8 Of a red bell pepper
1/8 Of a green bell pepper
1/2 tsp Cajun spice (Tony Catchery Brand preferred)
1/2 tblsp Minced garlic
3 tblsp Honey
4 tblsp Bbq sauce (Any flavor you like. I use Jack Daniels Hickory)

**Additions if you want: Diced ham or browned ground hamburger or bacon pieces.

Method:
Pour the beans into a colander and rinse off, then let stand to drain.

Chop the onion, peppers & Garlic until they are fairly small peices. If you want, you can pulse in the food processor until they are the right size.

Put the beans into the crockpot. (If you are adding meat I put the meat in first then the beans.)

ADD THE FOLLOWING INGREDIENTS BY DROPPING ON TOP OF BEANS... DO NOT STIR IN WHILE ADDING THEM.

Sprinkle with the cajun spice.

Dribble the honey and BBQ sauce over the beans and add the chopped and minced ingredients.

Once all of the Ingredients are on top of the beans, GENTLY fold them in. Try not to squish the beans, do not use a wooden spoon, as that smashes the beans.

Set the crock on low heat and cook for at least 5 hours. The longer the beans cook, the better they are. But dont let them get mushy.

I check the crock occasionally to see if too much moisture is building up in the crock. If I think there is too much liquid I remove the lid and place a screen over the crock to let the moisture evaporate a bit.

These are great beans for a potluck.

Thanks Celeste

Crock pot bean recipes are always highly sort after and this one sure does sound enticing.

I don't eat many beans but I think I will have to give this one a try.

Happy Cooking

Hi Celeste,
This appears to be a healthy and tasty recipe. It'll be on our buffet at our next get-together before New Years when we have our annual after Christmas party.

Hi Celeste,

Haven't had time to make your recipe yet, but I know the taste will be great just because of all the wonderful ingredients. Crock Pot suppers are the way to go at this busy season.
