Neil and I love the wonderful combination of ingredients in the recipe! It sounds so delicious, and we are excited to try this one when our friends come for dinner.
Crock Pot Lamb and Chick Pea Stew Recipe
3-6 lb boneless lamb loin large dice
1 med dice large onion
1 med dice pealed large carrot
2 med diced stalk celery
3 cloves chopped garlic
1/4 t ground coriander
1/4 t thyme
1/2 gallon chicken stock
1/4 t chopped mint
1 can drained chick peas
1 med diced potato
1 med diced tomato
salt and pepper
In a medium skillet, sear lamb on all sides.
Remove from skillet and place in crock pot.
Saute onions, celery, and carrot in the skillet.
Cook the vegetables for only a couple of minutes.
Add chopped garlic and cook for 1 more minute.
Add mixture to crock pot along with the potato, tomato, coriander, and thyme.
Then top off the crock pot with chicken stock.
Cook on low over night or all day.
1 hour before you serve, add chick peas and season.
At service add chopped mint and salt and pepper to taste.
You could substitute pork or beef in this dish.
