I will admit to not being a big fan of prunes. And was tempted to leave them out. But Neil talked me into leaving them in. And I am so glad I did.
The prunes and apricots go all soft and mushy and turn into a delicious sauce. So if you are like me and don't like prunes, give it a go - it truly is delicious.
We found this recipe in an old recipe book from the 1970's - “Crockery Cookery by Mable Hoffman”. A lot of the recipes are dated and not very appealing however we have found a few gems like this one and have earmarked a few more to try.
We tried the lamb shanks last night with prunes and apricots, was a big hit with the entire family, including the two seniors (over 80). Am a working mother (like most people) and just love coming home to a cooked meal. Will now try all of your recipes.
