Crock Pot Oven Roasted Tomato Basil Sauce Recipe
20-30 medium red tomatos
1 red onion
2 celery stalks
1/4 cup chopped fresh basil
3 T diced galic
1/4 cup olive oil
1/4 cup balsamic vinigar
1/4 cup red wine vinigar
2 T dried oregeno
2 T fresh thyme leaves
This recipe starts in the oven to get a realy home made comfort food taste.
Pre heat oven to 400F.
Grease 2 or three cookie sheets.
Quarter your tomatos and arange on the pans.
Chop the celery, mushrooms, onoin and the carrot in to small pieces.
Sprinkle evenly over all the tomatos.
In a bowl stir together the vinigers, oil, and spices.
Start with 1 T of salt and 2 tsp of pepper add more later.
Drizzle evenly over all the tomatos.
Cover the pans with foil.
Bake for 40 min.
Remove from oven and carefully spoon the tomatos in to a blender.
Pulse with the lid partaily on so that steam can escape.
Pour into crock pot.
Continue until all the tomatos have been prossesed.
Make sure you are careful when blending them, only fill it half way.
Set pot on low.
Add more basil, salt or other spices to taste.
Allow to cook for 3-7 more hours.
This is perfect for gardeners when those tomatos start ripening all at once!
Many recipes are so plain and boring but this one "kicks it up a knotch" by oven roasting them before.
But hey want to kick it up another knotch?
Add some of your favorite red wine.

This recipe makes alot!!
I take and freeze it in two or three cup containers for during the winter.
Then when I want pasta, I just put it in the microwave and thaw it out. It is so much better than any thing out of a can or jar.
