Crock Pot Polynesian Chicken Recipe

Neil and I really love this recipe because Stephanie tells us how to easily change it from Polynesian, to Indian, to South American.

Crock Pot Polynesian Chicken Recipe
4 to 6 pieces chicken
1 12 ounce can coconut milk
1 tsp ground pepper
2 cup chicken broth
2 tbs. lime juice
1 tsp Mojo Conseco or seasoned salt
1 pound baby carrots
1 cup basmati rice
1 cup frozen peas
Put all ingredients into crockpot.
Simmer on low to medium all day until chicken and rice are cooked.
Add frozen peas 10 minutes before you are ready to serve.
The subtle flavors blended together and slow cooked has a very authentic SE Asian taste.
Add 1 tsp of curry for an Indian variation.
Add 1 tsp cumin for a South American flare.
