Crock Pot Quesadillas Recipe

Neil and I both agree that this recipe sounds wonderful! We can't wait to give it a try!

Crock Pot Quesadillas Recipe
2 lb beef roast
1 can beef broth
1/4 C ketchup
2 TB minced garlic
2 medium onions sliced
1 tsp each salt & pepper
1 tsp of your fav. seasoning (ie. adobo, seasoning salt, steak seasoning)
8 flour tortillas
2 C shredded cheese
1/2 C salsa (optional)
1/4 C oil (for pan)optional can use cooking spray
Combine first 7 ingredients in crock pot.
Cook on low 6-8 hours, or until meat pulls easily apart.
To assemble each tortilla:
Heat pan.
Spray with nonstick spray or use a little oil and place tortilla flat.
Sprinkle with 1/4 cheese, approx. 1-2 oz. of meat/onion mixture.
You may add spoonful of salsa if desired.
Heat until cheese is melted.
Fold quesadilla in half and serve.
Super easy and yummy.
One of my hubby's favorite meals.
You can customize the meat mixture very easily by adding hotsauce, chili peppers, etc. to make it as hot/mild as you'd like.
I prefer it on the mild side.
