Crock Pot Rice Pudding Recipe

  We love the low fat, low calorie version of this recipe. Of course we will have to try both to compare. Sounds delicious!

Crock Pot Rice Pudding Recipe

1 quart (or liter) whole milk
1 cup cream
2 eggs
1 1/2 cups white rice
1 cup sugar
1 tsp vanilla extract
1 cup raisins

Beat the eggs into the milk, add the cream and pour into the crockpot.

Add the sugar and rice, stir and cover.

Cook on low for about six hours, stirring occasionally.

When rice is cooked and it's thickened, add the vanilla and raisins.

Stir and serve.

You can use skim milk and leave out the cream for a low fat version, and can use splenda to lower the calories.

Its important to add the raisins last, otherwise they will absorb liquid and return to grapes!
