This Crock Pot Rice Recipe is easy and delicious. We served it with stewed plums and everyone lined up for seconds.

The original recipe, I found in a dessert recipe book, was done in the oven and used twice the coconut milk - way too strong for the crock pot. I could barely eat it and I love coconut.

So on take two, I halved the coconut milk and the result ... seconds for everyone.

PS - If they leave any, it is delicious cold the next day.

Just wonderful served with stewed plums. The tart of the plums compliments the sweet creaminess of the rice.

Cuban/Puerto Rican Dessert
Your coconut rice pudding recipe is well adapted for the crock pot, however I just wanted to let you know that if you use 1/3 cinnamon water and 2/3 regular water, add a dash of nutmeg, and about 3/4 cup of raisins.. then what you have is Arroz Con Leche! a traditional cuban/puerto rican style dessert that is good warm, but even better chilled!
Food for thought :)

Thanks Lauren - that certainly does sound like a tasty adaption to this crock pot rice dessert.
