Crock Pot Roast Lamb

An interesting stuffing brings a new dimension to this crock pot roast lamb.

You will need a de-boned piece of lamb for this recipe. Get your butcher to do it for you and then tie it up with some cooking twine after you put in the stuffing.

Stuffed Crock Pot Roast Lamb

1 piece roasting lamb (de-boned)
Stuffing

1 cup breadcrumbs
1/2 cup drained, thawed - frozen spinach
2 small (1 medium) onion
1 garlic clove - crushed
1/4 cup pinenuts or sunflower seeds (much cheaper)
1 tsp melted butter

Rub
2 tsp olive oil
1 lemon rind - grated
1/4 cup lemon juice
2 tsp dried oregano (2 tbl fresh)

Combine all the stuffing ingredients in a bowl and place onto opened up piece of meat. Securely tie meat together, with stuffing on the inside.

Place the lamb in the crock pot.

Combine all the rub ingredients and rub over the lamb.

Cook on low for 7 to 8 hours.

Make up some gravy and serve with roast vegetables for a hearty meal.
