Neil and I love seafood soups and this one sounds really tasty. We'll have to try this one soon.
Crock Pot Slow Cooked Shrimp Soup Recipe
1 1/2 cups diced celery
2 bunches of green onions washed and sliced (including green tops)
2 medium russet potatoes washed and cut into eighths
1 cup chopped red bell pepper
2 cloves garlic, minced
1 teaspoon lemon pepper
1 bottle clam juice
2 cups milk
1 lb. shrimp, de veined & shelled
In crock pot combine celery,green onion,potatoes, red bell pepper, garlic,lemon pepper and clam juice.
Cook on high for 2-3 hours or until vegetables are tender.
Puree vegetables in food processor.
Return to crock pot.
Heat milk just enough to take the chill off.
Stir into vegetable mixture. Cook on high for 1 hour.
Cook on high 1/2hour or until shrimp is bright red and fully cooked.
You may thin soup if you wish by adding a small amount of milk at a time.
You may chill and serve cold or serve warm right out of the crock pot.
If you choose to add more liquid to the juice make sure it is warm to prevent crock from cracking.
