This sounds like a terrific recipe. Neil and I will give it a try next time we are in the mood for soup.
Crock Pot Stuffed Pepper Soup Recipe
1-large can V8 juice
1-box Zatarains cajun rice mix
2-3 lbs lean ground beef
1-lg vidalia onion
4-lg green peppers
1/4 tsp celery salt
salt and pepper to taste
Dice onions,and rice mix with ground beef in skillet and brown/braise till the onions are tender and the beef is done,stirring frequently.
I season the beef and onions as I cook them, you may choose not to.
Drain grease and put mixture into crock pot.
Clean peppers and cut into 1" strips.
Add to crock pot along with V8 juice,and celery salt,salt and pepper.
Cook on low 6-8 hours.
In place of beef use ground veal,pork,chicken or turkey.
Frozen greenbeans,corn,or stew veggies can be added for variety or to make a heartier stew type soup.
I first tried this soup at a restaurant in Marion IL.
It was delicious and I immediately went home and tried to reproduce the soup.
This is one of the ways I came up with.
I also make it on the stove top, cooking time is much less there.
