Slow Cooker Chicken Recipe

This slow cooker chicken recipe was sent in by one of our visitors and it has made my mouth water.

This fantastic simple crock pot recipe comes from Liz of the United States.

Liz writes "My husband's favorite. And perfect for when you don't have a lot of time to mess with baking and such".

That’s why the slow cooker (crock pot) is such a great appliance to have - it is so easy to use. Every home should have one.

Neil and I have not tried this one yet - but it is so easy and I think it sounds delicious.


Visitor Recipe
Southwestern Chicken
4 boneless, skinless chicken breasts
1 jar medium salsa, divided
1 can black beans, drained and rinsed
1 can whole kernel corn (or mexican corn)

Mix corn, beans and half the jar of salsa in the crock pot.
Place chicken on top and coat with remaining salsa.
Cook on low for 4-6 hours.
About 10 minutes before you eat, sprinkle with cheese and let melt.

PS Also good the next day if you shred the chicken and put mixture in tortilla with some sour cream.

(After typing this up, I feel hungry - it sounds really good).
