Yummy sounding recipe! Neil and I haven't tried anything quite like this. We are interested to see if we can taste the ginger ale.
Well I bought some ginger ale and gave it a try - not bad at all.

Slow Cooker Ginger Ale Pot Roast Recipe
1 bag (16oz) baby carrots
4-6 russet potatoes,peeled & cubed
3 to 4 pound rump or pot roast
1/2 medium onion,thinly sliced
1 envelope brown gravy mix
1 envelope onion soup mix
2 cups gingerale (DO NOT USE DIET GINGERALE)
Place carrots & potatoes in greased 4 to 6 quart slow cooker.
Place roast over top.
Lay onions on top of roast.
Dissolve gravy & soup mixes into gingerale (be careful...it will fizz up a bit) & pour over meat.
Cover & cook on low heat 8-10 hours.
This roast turns out soooo tender & with quite a lot of juice.
The gravy package thickens up the juice a fair bit, but you can thicken it further if you like.
I also sometimes add shredded cabbage in with the veg, and then skip the salad.
I serve it with a spinach, craisin & apple salad that I top with apple cider vinegrette dressing.
