Recently, Robin L of the United States emailed us asking about how to cook mashed potatoes in the crock pot.
Not being something we have tried ourselves, I found Robin a recipe from elsewhere.
Robin, kindly emailed a reply, saying how successful it was.
Hi Lisa,
Thank you for your reply!
I went ahead and tried it last week and it worked out
pretty well.
I actually had 10 lbs of potatoes, so my large
crockpot was nearly fully to the rim [yes, I know I am
not supposed to fill it that much :)]. I added water
until it was almost to the top of the potatoes, but
not completely covering them. I cooked them overnight
(about 7 hours). They were cooked very well. A
couple were actually a little overdone and they were
the ones on the top.
All in all, I think it was a very good way to cook
potatoes.
Thanks again for your reply and for the information!
Take care,
Robin

Slow Cooker Mashed Potato Recipe
3 pounds fingerling potatoes, scrubbed and halved
water to cover
1 stick butter, softened
heavy cream about 1/2 cup
Salt and freshly ground black pepper
Place the potatoes in your slow cooker. Pour in enough water to just cover the potatoes. (If they are not covered, they will darken as they cook.)
Cover and cook on HIGH for 4 to 8 hours, or until the potatoes are very soft. Use a ladle to scoop out most of the cooking liquid.
Add the butter to the potatoes and use potato masher or a wooden spoon to mash the potatoes. It's ok if they are a little lumpy. As you mash the potatoes, add heavy cream until the right consistency is achieved. Season with salt and pepper to taste and serve hot.
