Monica K, has supplied us with this fantastic Slow Cooker Pork Recipe.
We have not cooked it yet but it sure does sound delicious.

Pork Chile Verde
2-3 lbs pork (chops or roast)
1large can green chile enchilda sauce
garlic to taste (I use 1 T.)
red pepper to taste (I use 1 t.)
water to cover
Brown pork, throw in crock pot with other ingredients for 8 hours.
Serve with cheese quesadillas.
