Easy Tasty Crockpot Potato Soup
1 package herb & butter instant mashed potatoes
6 slices bacon sliced and fried crispy
1 med onion diced and sautéed in bacon fat
3 medium russett potatoes cut into 1" cubes tossed in bacon fat for minute to coat
Put all ingredients except instant potatoes in slow cooker with 3 cups of milk or light cream, salt and pepper to taste. Cook on high till simmers about 1 hour, turn heat to low and cook another hour or so, till potatoes are tender. Then add instant potatoes, enough to thicken to the consistency you prefer. Put in bowl with a half tsp of butter on top, sprinkle with paprika and enjoy.
