Slow Cooker Taco Soup - A taco soup - I must say the name of this recipe did have me intrigued.
After reading through the ingredients my mouth started watering. What a great sounding crock pot meal.
And michelle's tip about omitting the juice to make an alternative meal once again just shows how versatile slow cooking really is.
Slow Cooker Taco Soup Recipe
1 lb. ground beef or turkey - cooked and drained
1 can (15.5oz.) diced tomatoes with mild chiles - undrained
1 can (15.5oz.) corn - undrained
1 can (15.5oz.) black beans - undrained
1 can (15.5oz.) sliced black olives
1 medium onion - diced
1 medium green bell pepper - diced
1 packet of taco seasoning
1 packet of dry ranch dressing mix (not dip)
Approx 1 cup of tomato juice
Shredded cheddar cheese (optional)
Tortilla Chips (optional)
Brown and drain ground meat & transfer to slow cooker.
Add dry taco mix and dry ranch dressing mix to ground meat & mix well.
Add diced tomatoes, corn and black beans - all undrained.
Add sliced black olives, diced onion and diced green bell pepper.
Add approx 1 cup of tomato juice.
If more broth is desired, add more tomato juice or water to mixture.
Cook on Low for approx 5 hours.
Serve with shredded cheese and chips if desired.
This is a really good soup that taste just like tacos. In fact, if you omit the tomato juice/water it makes a good meat for tacos.
