The inspiration for this pork is thanks to Jamie Oliver. I found a recipe of his in a magazine and then changed it so it would suit the crock pot.
And once you try it, you are bound to agree that it is fantastic.
All the flavors come together beautifully and you can actually distinguish them.
We used whole coriander (cilantro seeds) and fennel seeds and then crushed them with the mortar and pestel - the aroma was delicious. Do try this. If not you could used pre-ground seeds, but it won't be as aromatic.
Please note that corinader (cilantro) seeds DO NOT taste anything like the leaves. Personally I hate the leaves - taste like stink bug (well it does to me). So if you are like me and don't like the leaves, have no fear the seeds are great.
