Healthy Crock Pot Chicken Recipe

This recipe looks excellent! Neil and I love healthy recipes that are easy and taste good.
This healthy crock pot recipe sounds excellent for anyone recovering from illness or just interested in general health.

Beth's Crock Pot Black Bean Chicken Recipe
*3 Boneless, skinless chicken breasts, frozen
*About 3/4 cup of black beans, more or less depending on your taste***
*Half a packet of taco seasoning
*One can of diced tomatoes with green chilies (RoTel tomatoes work great.)
Feeds 4-5 people, or 2 people and plenty for leftovers for the week.
Put black beans in bottom of crock-pot.
Place frozen chicken on top of beans.
Sprinkle with taco seasoning. (Use as much or as little as you want, according to your taste.)
Pour can of tomatoes with juice over chicken.
Cook 8-10 hours on low.
Shred chicken with forks and stir with beans and tomatoes.
Serve with rice and make into burritos, or make a chicken salad!
Notes
***I always use dry black beans and soak them overnight for this recipe.
It's much healthier than using canned beans.
I also use brown rice to stir in with the chicken mixture.
High in protein, fiber, folate, antioxidants, and whole grains!
Very healthy and easy meal.
This recipe is great because it takes me 5 minutes to throw together in the morning, and it's ready when I get home after working all day!
