White Queso Crock Pot Dip

1 small onion, chopped
1/2 of a red pepper, seeds removed and chopped
1 cup of frozen spinach, thawed and squeezed dry
1 can of hot Rotel tomatoes, undrained
2 cups of half and half
2 pounds (1kg) of white American cheese, shredded
Cook the onions in a saucepan over medium heat for 5 minutes. Add red pepper and cook for an additional 2 minutes.
Put the onion/pepper mixture into a slow cooker and stir in the spinach and tomatoes.
Add the half and half and cook on high for one hour.
Stir in the cheese and cook for two additional hours on low.
Serve with corn chips, fresh vegetables, bread, or soft pretzels.
I like the sound of this crock pot dip recipe and can see it would be great for a party.
Just some notes for all the non-americans:
What is Half and Half? It is a dairy prouduct - made of half milk and half single cream.
White American cheese - I think a cheddar would substitute ok
